The setting: This restaurant right by the cathedral isn’t lacking in character (timbered walls, tuff rock, a vaulted cellar, etc.) and the name it bears references the Gallic people who once occupied Touraine.

The chef: Mathieu Melin gained his experience working in the largest starred establishments of France and Ireland.

The dishes: Here we taste a traditional yet still trendy cuisine that respects the past and remains creative; these dishes honour regional specialties. The market menu is refreshed weekly.
