L'Atelier du Talemelier Tours
The ambience: The retro storefront, exposed stone, wood and forged iron… a shop that teems with real authenticity.
The workshop: At the rear of the boutique the bakers and pastry chefs go about making their product, creating flour and grain mixes in the Talemelier style (former name of the bakery).
Their expertise: Cyril Chambay uses traditional French flours, without additives, and organic flours to work on these long fermentations. A sign of excellence that really makes a difference!
• Their appearance on M6 on the show: “The best Bakery in France 2017” (1st prize in the Indre-et-Loire and 2nd in the regional prize of Centre Val de Loire).
• Finding hot bread all day and quick formules at midday.
• The generous amount of seeds on and in their breads!
